The black or Périgord truffle (Tuber Uncintum ) comes originally from the Périgord region in France. It grows with oak and hazelnut trees. As it can be found in late autumn and winter, it is also called „winter truffle“. Black Truffles also known as „Périgord Truffles“ or Norcia truffles, grow from December to March in France (particularly in the Périgord region and in the Provence), in Italy (in Umbria, Piedmont and other regions) and in Spain. Here again, the area of origin serves as a significant indicator of quality, but less famous regions can also produce excellent truffles. Unlike the white truffle, black truffles are eminently suitable for cooking and can be used in many different dishes.
Truffles are formed naturally in the ground therefore each truffle may vary slightly in size and color.
