Every year, on our family farm in Puglia, Italy, we produce Novello — a fresh olive oil made only at the very start of the harvest.

This oil is almost never sold. It is tasted immediately at the mill, just hours after pressing.

What you get is the purest expression of the olive — fresh, vibrant, alive, with a green, slightly peppery finish.

Produced in extremely limited quantities, Novello is the ultimate experience — more comparable to a rare fine wine than a traditional olive oil.

Many of our Michelin-starred chef clients use it to finish their dishes.

With an exceptionally low acidity of just 0.19%, its purity is such that, while it can be used for cooking, it is best enjoyed as a finishing touch — or simply drizzled over warm, crusty bread.
